Beef Rendang



Voted the best food in the world by CNN travel in 2011 and again in 2017, Rendang proves that the world is more than ready to embrace the spice. Rendang originated from West Sumatra where spices are heavily used. The area is famous for thick curries, green chili sambal and almost everything is drench in red chili paste.
Rendang is basically beef curry cooked for hours, resulting beef so tender it falls apart and the coconut milk based sauce intensely flavors every fiber of the beef. To create the authentic recipe will take years of practice and hours patience but fear not, this following recipe will definitely up your cooking game and start impressing your dinner guests with half the hassle.


Ingredients 
Spice Blend
  • 12 cloves garlic
  • 300 g red chili
  • 250 g onions
  • 4 candlenuts
  • 5 cloves
  • 50 g ginger
  • 50 g galangal
  • 50g of fresh turmeric
  • 11/2 tsp cumin
  • 11/2 tsp ground coriander
  • 1 tbsp. salt
  • 1 tsp sugar


Aromatics
  • 4 stalks lemongrass
  • 3 pieces kaffir lime leaves
  • 1 piece tamarind


  • 1 kg beef, top side cut into 4 cm squares
  • 600 ml coconut cream
  • 100 ml vegetable oil




Method
  1. Using a blender, blend the Spice Blend ingredients into a smooth paste
  2. Preheat a wok, add oil and sauté the spice blend until fragrant, add the aromatics. Cook until the natural oil from spices comes out
  3. Add the beef and coconut milk, stir until coconut milk is boiling and turn to low heat
  4. Let simmer and add water to prevent the sauce becoming too dry and burnt
  5. Cook until the beef is tender and the color of the sauce darken into dark brown, approximately 2 – 3 hours
  6. Serve with steamed rice
